Keto Pizza Waffles

Ingredients
- 4 large eggs
- 4 tablespoons Parmesan cheese
- 3 tablespoons almond flour
- 1 tablespoon psyllium husk powder
- 1 tablespoon bacon grease (or butter)
- 1 teaspoon baking powder
- 1 teaspoon Italian seasoning (or spices of choice)
- Salt and pepper to taste
- 1/2 cup tomato sauce (we use Rao’s)
- 3 oz cheddar cheese
- 14 slices pepperoni (optional)
Instructions
- Mix Ingredients: Add all ingredients, except for the tomato sauce and cheddar cheese, to a container.
- Blend: Use an immersion blender to blend everything together for about 30-45 seconds until the mixture thickens.
- Cook in Waffle Iron: Heat your waffle iron and add half of the mixture to it. Cook until there is little steam coming out of the waffle iron.
- Repeat: Once done, remove the waffle from the iron and repeat with the second half of the mixture.
- Add Toppings: Add 1/4 cup of tomato sauce and 1.5 oz of cheddar cheese on top of each waffle. Optionally, add pepperoni slices on top.
- Broil: Broil the waffles in the oven for 3-5 minutes until the cheese is melted and starting to crisp on top.
- Serve: Remove from the oven and serve hot.
