Italian Chocolate Torrone
A classic Italian confection, this chocolate torrone is often referred to as nougat for its nutty richness rather than its texture. Shaped into an elegant log, it features a decadent blend of dark chocolate, toasted almonds, and candied peel, enrobed in creamy white chocolate and crunchy almond flakes. Sliced thinly, it makes a sophisticated treat for dessert platters or holiday gifts.

Ingredients (Makes 20 Slices)
For the Torrone:
- 115 g (4 oz) plain (semisweet) chocolate, chopped
- 50 g (2 oz / 4 tbsp) unsalted butter
- 1 egg white
- 115 g (4 oz / generous ½ cup) caster (superfine) sugar
- 50 g (2 oz / ½ cup) ground almonds
- 75 g (3 oz / ¾ cup) chopped toasted almonds
- 75 ml (5 tbsp) chopped candied peel
For the Coating:
- 175 g (6 oz) white chocolate, chopped
- 25 g (1 oz / 2 tbsp) unsalted butter
- 115 g (4 oz / 1 cup) flaked (sliced) almonds, toasted
Method
- Melt Chocolate & Butter: In a heatproof bowl set over a pan of simmering water, melt the dark chocolate and butter, stirring until smooth. Remove from heat.
- Whip Egg White & Sugar: In a clean, grease-free bowl, whisk the egg white with the sugar until stiff peaks form.
- Combine Mixture: Gradually fold the melted chocolate into the egg white mixture. Stir in the ground almonds, chopped toasted almonds, and candied peel until fully incorporated.
- Shape the Torrone: Turn the mixture onto a large sheet of baking parchment. Using your hands, shape it into a thick log. As it cools, use the parchment to press and mold it into a triangular shape (or a round roll, if preferred). Twist the ends to secure and chill in the refrigerator until firm (about 2 hours).
- Prepare the Coating: Melt the white chocolate and butter in a heatproof bowl over simmering water. Unwrap the chilled torrone and quickly spread the white chocolate over the surface. Press the flaked almonds evenly onto the coating before the chocolate sets.
- Chill & Serve: Return to the refrigerator until completely firm (about 1 hour). Slice thinly with a sharp knife and serve.
