Prep Time: 10 minutes (+ 2–8 hours marinating)
Cook Time: 10 minutes
Servings: 2
Ingredients:
- ¾ lb (340g) boneless, skinless chicken breast, cut into 1-inch cubes
- ½ tbsp fresh garlic, minced
- Juice of ½ lime (about 1 tbsp)
- ½ tbsp extra-virgin olive oil
- 1 tsp fresh oregano, minced (or ½ tsp dried oregano)
- ¼ tsp Himalayan pink salt (or sea salt)
- ¼ tsp freshly ground black pepper
For Serving (Optional):
- Lime wedges
- Chopped fresh cilantro or parsley
- Tzatziki or garlic aioli
Directions:
- Prep Skewers:
- If using wooden/bamboo skewers, soak in water for 30 minutes to prevent burning.
- Make Marinade:
- In a small bowl, whisk together garlic, lime juice, olive oil, oregano, salt, and pepper.
- Marinate Chicken:
- Place chicken cubes in a glass container or resealable bag. Pour marinade over chicken, tossing to coat evenly.
- Cover and refrigerate for at least 2 hours (up to 8 hours for deeper flavor).
- Grill:
- Preheat grill to medium heat (330°F/165°C) for direct cooking.
- Thread chicken onto skewers, packing pieces close together (to prevent drying).
- Lightly oil grill grates. Grill skewers for 8–10 minutes, turning occasionally, until internal temperature reaches 165°F (74°C) and edges are lightly charred.
- Serve:
- Garnish with lime wedges and fresh herbs. Serve immediately with optional dips or over a Greek salad.
Pro Tips:
- Even Cooking: Cut chicken into uniform pieces for consistent grilling.
- Extra Flavor: Add 1 tsp smoked paprika or ½ tsp honey to the marinade for depth.
- No Grill? Cook on a stovetop grill pan or broil in the oven (4–5 minutes per side).
