Servings: 8
Ingredients
- 4 tbsp (56g) unsalted butter
- 8 oz (225g) cream cheese, cubed (softened for easier melting)
- 2 cans (29 oz/820ml total) chicken broth (or 3½ cups homemade)
- 4 cups (600g) cooked chicken, shredded (rotisserie works great!)
- ½ cup (120ml) heavy cream
- 4 tbsp Garlic Gusto seasoning or 1 tsp garlic powder + 1 tsp Italian seasoning
- Salt and black pepper, to taste
Optional Add-Ins:
- 1 cup spinach or kale (stirred in at the end)
- ½ cup grated Parmesan (for extra richness)
- Crumbled bacon or crispy prosciutto (garnish)
Instructions
1. Sauté & Melt
- In a large pot, melt butter over medium heat. Add shredded chicken and sauté for 2 minutes.
- Add cream cheese and Garlic Gusto (or garlic powder + Italian seasoning). Stir until cream cheese melts into a creamy paste.
2. Simmer & Blend
- Pour in chicken broth and heavy cream. Bring to a gentle boil, then reduce heat to low.
- Simmer for 5–6 minutes, stirring occasionally, until slightly thickened.
3. Adjust & Serve
- Season with salt and pepper to taste. For a smoother texture, blend half the soup with an immersion blender.
- Ladle into bowls and garnish with:
- Fresh parsley
- A drizzle of cream
- Cracked black pepper
Pro Tips
- Thicker Soup? Mix 1 tbsp cornstarch with 2 tbsp cold water, stir in during simmering.
- Lighter Version: Substitute half the cream cheese with Greek yogurt (add at the end to prevent curdling).
- Meal Prep: Stores refrigerated for 3 days or frozen for 1 month. Reheat gently to avoid separating.
